Black Bean Salad with SmartBran™ Mediterranean Salad Toss
A quickly assembled salad that is glorious to behold, thanks to its slivers of purple cabbage and flecks of carrot against the backdrop of black beans. The SmartBrain ™ Salad Toss is a fiber-packed condiment that can be used instead of croutons.

Ingredients:
- 1 can Black Beans, (15 oz.) drained
- 1 1/2 cup Carrots, finely chopped
- 1 1/2 cup Red Cabbage, finely chopped
- 1/3 cup Sun-Dried Tomatoes (oil-packed), finely chopped
- 1/4 cup Olive Oil or Oil from Sun-Dried Tomatoes
- 1 1/2 tbsp. Balsamic Vinegar
- 1/2 tsp. Prepared Mustard
- 1/2 tsp. Salt, or to taste
- 1/4 cup SmartBran™ Mediterranean Salad Toss (see recipe on our website)
Directions:
- In a bowl or storage container, combine black beans, carrots, red cabbage, and sun-dried tomatoes.
- Prepare dressing by blending oil, vinegar, mustard, and salt in a small bowl or jar.
- Pour dressing over salad and toss to coat. Adjust seasonings. Garnish each portion with Mediterranean Salad Toss. Refrigerate for up to 4 days.
